Standing By

Some days on duty can be filled with four to 5 hours of flying from one side of California to the other in good weather and not so good weather. The shifts without any flight requests can be, needless to say, boring.  On a normal day, or night, we drink coffee until we twitch and then taper which can obviously make the slow days... eich.

There's lots of photos that get taken in this business.  Everyone wants a picture of a helicopter; flying by, landing, taking off, running, not running, panoramic, selfies (not in-flight please).  Most turn out pretty generic, videos are so much better, because helicopters are so dynamic.  But occasionally a cool moment is captured, especially when the weather is dynamic.

I had an Epiphany.

Cake, cake, cake.

I started baking Galette des Rois back in 1999. I was flying to the oil rigs in the Gulf of Mexico and living in Lafayette, Louisiana.  During Mardi Gras fellow employees would routinely bring Mardi Gras King Cakes, a pudding filled dount ring drenched in purple, green & yellow royal icing, into the pilots ready room for a diabetic nightmare start to the flying day.

On my weeks off I'd spend my days watching Emeril on the new Food Network and immersing myself in the Cajun cuisine and lifestyle of southern Louisiana. While persuing a "french bakery" in town I came across a Traditional King Cake.  Whoa.  So much better than a Mardi Gras King Cake. So. Much. Better.

To my great surprise the Two Fat Ladies in their inimitable fashion showed me how to make their Galette des Rois and away I went.  It's been an Epiphany / Lent / Mardi Gras tradition ever since with occasional changes to the filling, puff, shape, decoration and feve (prize) with just as many variations on successful presentation, bake, filling blow outs and the like.

With this years variation  incorporating suggestions from Mary Berry, docking the edges, and David Lebovitz, rum and orange zest in the filling, Eden has come up with a complete success.
